Fluffy Blueberry Pancakes

Ingredients:
- 2 tablespoons Lyons Raw Organic Blueberry Powder
- 1 cup rolled oats
- 2 ripe bananas
- 1/2 cup unsweetened almond milk
- 2 large eggs
- 1 teaspoon vanilla extract
- Optional toppings: raw honey or maple syrup, coconut flakes, Greek yogurt
Instructions:
1. Blend the Oats: Place the rolled oats in a blender and blend until you achieve a flour-like consistency.
2. Add the Remaining Ingredients: Add the ripe bananas, almond milk, eggs, vanilla extract and Lyons Raw's Organic Blueberry Powder to the blender. Blend everything together until smooth and well-combined.
3. Cook the Pancakes: Heat a non-stick skillet over medium heat. Pour a small amount of the pancake batter onto the skillet and cook for 2-3 minutes on each side or until golden brown. Repeat for the remaining batter.
4. Serve & Add Toppings: Once cooked, serve your pancakes hot with your favourite toppings such as raw honey, maple syrup, coconut flakes or Greek yogurt for added flavour and texture.
