Paula's Strawberry Cheesecake Stuffed Dates

Prep Time: 10 minutes | Serves: 6 

Ingredients:

  • 6 Medjool dates
  • 100g vegan white chocolate (e.g. Funky Fat Foods – use code “DREAMY” for -10%)
  • 1 tbsp Lyons Raw Strawberry Powder
  • 2 tbsp yoghurt
  • 2 tbsp vegan cream cheese
  • 4 fresh strawberries, diced
  • 2 crushed cookies

Instructions:

1. Prepare Dates: Carefully remove the pits from the Medjool dates without splitting them apart.

2. Make Filling: In a small bowl, mix the yoghurt, vegan cream cheese, and diced strawberries until well combined.

3. Stuff & Freeze: Spoon the filling into each date and place them in the freezer for at least 1 hour to firm up.

4. Coat in Chocolate: Melt the white chocolate and stir in the strawberry powder until smooth.

5. Dip & Decorate: Dip each frozen stuffed date into the strawberry chocolate and place them on parchment paper. Decorate with the remaining melted chocolate and sprinkle with crushed cookies.
