No-Bake Raspberry Protein Balls

Prep Time: 10 minutes | Serves: 12

Ingredients:

  • 1 cup rolled oats
  • ½ cup natural peanut butter (or almond butter)
  • ¼ cup raw honey or maple syrup
  • ¼ cup ground flaxseeds
  • ¼ cup chocolate chips (optional)
  • 1 teaspoon vanilla extract
  • 1 tablespoon Lyons Raw Organic Raspberry Powder
  • Pinch of salt

Instructions:

1. Combine Dry Ingredients: In a large bowl, mix together the rolled oats, ground flaxseeds, chocolate chips (if using), raspberry powder and a pinch of salt.

2. Add Wet Ingredients: Add the peanut butter, raw honey (or maple syrup) and vanilla extract to the dry mixture.

3. Mix Together: Stir until all ingredients are well combined. If the mixture is too dry, add a teaspoon of water at a time until it reaches a dough-like consistency.

4. Form Balls: Roll the mixture into 12 equal-sized balls, about 1 inch in diameter.

5. Chill: Place the protein balls on a baking sheet lined with parchment paper and refrigerate for at least 30 minutes to allow them to set.

6. Serve: Enjoy immediately or store in an airtight container in the refrigerator.
