Shan's Banana Bread

Prep Time: 10 minutes | Cook Time: 50-60 minutes | Total Time: 1 hour  | Serves: 6-8

Ingredients:

  • 3 ripe bananas, mashed
  • 2 large eggs
  • 40g unsalted butter, melted
  • 1/2 cup of milk of choice
  • 20g mct coconut oil
  • 1 cup coconut sugar
  • 265g self-raising flour
  • 40g plain flour
  • 265g self raising flour
  • 1 tsp cinnamon ground
  • 1 tsp Lyons Raw Organic Blueberry Powder
  • 1 tsp Lyons Raw Organic Raspberry Powder

Instructions:

1. Mix all the wet ingredients in a separate bowl & dry ingredients in another bowl.

2. In a big bowl combine both wet & dry ingredients together.

3. Separate half the mix, leave one half plain, the other half add 1 tsp LR Raspberry Powder & 1 tsp LR Blueberry Powder

4. Place the plain half at the bottom of the banana bread tin & the berry half on top & swirl through

5. Bake at 180 degrees for 45 minutes for the most delicious Banana bread!

6. Sprinkle Lyons Raw powder of choice on top for extra goodness
