Summer Raspberry Popsicles

Prep Time: 10 minutes | Freeze Time: 4 hours | Serves: 6

Ingredients:

  • 1 cup fresh raspberries
  • 1 tablespoon Lyons Raw Organic Raspberry Powder
  • 1 tablespoon raw honey or maple syrup (optional, for added sweetness)
  • 1 cup water

Instructions:

1. Prepare Raspberry Purée: In a blender, combine the fresh raspberries, raspberry powder, raw honey or maple syrup (if using) and water. Blend until smooth.

2. Strain (Optional): For a smoother texture, strain the purée through a fine mesh sieve to remove seeds.

3. Fill Molds: Pour the raspberry mixture into popsicle molds, leaving a small gap at the top to allow for expansion during freezing.

4. Insert Sticks: Place sticks into the centre of each mold.

5. Freeze: Freeze for at least 4 hours or until completely frozen.

6. Serve: To release the popsicles, run warm water over the outside of the molds for a few seconds. Gently pull on the sticks to remove the popsicles.
