Sage's Raspberry White Choc Cookies

Prep Time: 10 minutes | Serves: 6–8 

Ingredients:

  • 1/4 cup softened butter
  • 1/4 cup coconut sugar
  • 1/4 cup almond meal
  • 1/4 cup gluten-free flour
  • 4 tbsp Lyons Raw Raspberry Powder
  • 1/4 cup white chocolate chips
  • 1 egg

Instructions:

1. Preheat Oven: Preheat the oven to 180°C (fan-forced).

2. Mix Wet Ingredients: In a medium bowl, combine the softened butter and coconut sugar. Add the egg and mix until smooth.

3. Add Dry Ingredients: Stir in the almond meal, gluten-free flour, raspberry powder, and white chocolate chips until a cookie dough forms.

4. Spoon onto Tray: Spoon 2–3 tablespoons of cookie dough per cookie onto a lined baking tray, leaving 1–2 cm between each.

5. Bake: Bake for 10–12 minutes or until the edges are golden. Allow to cool slightly before serving.
