Valentine’s Strawberry Protein Pancakes

Ingredients:
For the pancakes:
- ½ banana, mashed
- 2 eggs
- 1 scoop protein powder
- 1 tbsp flaxseeds
- Pinch of salt
- Pinch of cinnamon
For the toppings:
- ¼ cup coconut yogurt
- 1 tbsp Lyons Raw Organic Strawberry Powder
- 1 tsp cacao nibs
- Fresh strawberries, sliced
- Fresh banana, sliced
Instructions:
- In a bowl, whisk together the mashed banana, eggs, protein powder, flaxseeds, salt, and cinnamon until smooth.
- Heat a non-stick pan over medium heat and lightly grease if needed.
- Pour small amounts of batter to form pancakes and cook for 1-2 minutes per side until golden brown.
- In a separate bowl, mix coconut yogurt with strawberry powder.
- Stack the pancakes and top with the strawberry yogurt mix, cacao nibs, fresh strawberries, and banana slices.
