Valentine’s Strawberry Protein Pancakes

Prep Time: 5 minutes prep; 10 minutes cook time | Serves: 1-2

Ingredients:

For the pancakes:

  • ½ banana, mashed
  • 2 eggs
  • 1 scoop protein powder
  • 1 tbsp flaxseeds
  • Pinch of salt
  • Pinch of cinnamon

For the toppings:

  • ¼ cup coconut yoghurt
  • 1 tbsp Lyons Raw Strawberry Powder
  • 1 tsp cacao nibs
  • Fresh strawberries, sliced
  • Fresh banana, sliced

Instructions:

1. Whisk together in a bowl the mashed banana, eggs, protein powder, flaxseeds, salt, and cinnamon until smooth.

2. Heat a non-stick pan over medium heat and lightly grease if needed.

3. Pour small amounts of batter to form pancakes and cook for 1-2 minutes per side until golden brown.

4. Mix coconut yoghurt with strawberry powder in a separate bowl.

5. Stack the pancakes and top with the strawberry yoghurt mix, cacao nibs, fresh strawberries, and banana slices.

6. Serve and enjoy your Valentine’s treat! ❤️
