Valentine’s Strawberry Protein Pancakes

Ingredients:

For the pancakes:

  • ½ banana, mashed
  • 2 eggs
  • 1 scoop protein powder
  • 1 tbsp flaxseeds
  • Pinch of salt
  • Pinch of cinnamon

For the toppings:

  • ¼ cup coconut yogurt
  • 1 tbsp Lyons Raw Organic Strawberry Powder
  • 1 tsp cacao nibs
  • Fresh strawberries, sliced
  • Fresh banana, sliced

Instructions:

  1. In a bowl, whisk together the mashed banana, eggs, protein powder, flaxseeds, salt, and cinnamon until smooth.
  2. Heat a non-stick pan over medium heat and lightly grease if needed.
  3. Pour small amounts of batter to form pancakes and cook for 1-2 minutes per side until golden brown.
  4. In a separate bowl, mix coconut yogurt with strawberry powder.
  5. Stack the pancakes and top with the strawberry yogurt mix, cacao nibs, fresh strawberries, and banana slices.
